Low Fat Everything Meatloaf


My Aunt Pat is always on top of food trends and recipes.  She was into agave before it was cool.  Recently, she made a meatloaf and loved it so much she passed the recipe on to my mom.  My mom and I are both not big on meatloaf.  Just listen to the name- it’s a loaf of meat.  But this was really delicious and I would totally have it again!


2 pounds combo of ground beef and turkey

1 cup panko crumbs

1/4 cup egg substitute

1 tablespoon thyme

4-6 cloves garlic, finely chopped

2 cups yellow squash finely chopped

2 cups zucchini finely chopped

1 bell pepper finely chopped

1 onion thinly sliced

1 tablespoons olive oil

1/4 cup BBQ sauce, plus extra to taste

1/4 cup Worcestershire sauce

1/4 cup balsamic vinegar

hot sauce and salt and pepper to taste

Set oven to 400.  Toss onions, squash, zucchini, and pepper in olive oil and roast for about 20 minutes until soft and slightly browned.

In a bowl mix meat, panko, eggs substitute, thyme, garlic, Worcestershire sauce, and BBQ sauce.

Add roasted vegetables and mix.  Set oven to 425.

Line a cookie sheet with parchment paper and form a long, wide, low loaf.  Be sure to keep the loaf on the paper.  The baked on part doesn’t separate from the cookie sheet too well.

Mix balsamic vinegar with more BBQ sauce and cover the loaf.

Bake at 425 for about 1 hour.

My favorite part is that you get the nice crusty outside in every bite.
